You’ll Need
– 1 cup Greek yogurt (use Greek yogurt OR see Note #3 below
– 1 1/2 cups self-rising flour OR see Note #1 below
How To
Preheat the oven to 450 degrees Fahrenheit (230 degrees Celsius). Sprinkle a sheet pan with cornmeal.
Combine the two ingredients in a bowl until they just come together, then knead on a well-floured surface for 8 to 10 minutes. Add more flour, as needed, if the dough becomes too sticky.
Allow dough to rest 5 minutes, then shape into the pizza size and shape you desire.
Place the dough on the sheet pan. Brush with olive oil, then spread on sauce and any toppings you choose.
Bake for 10 to 15 minutes, until the crust has browned and is firm.
Notes
Don’t have self-rising flour? Use 1 1/2 cups flour plus 1 1/2 tsp baking powder and 1/4 tsp salt)
This dough can be used for bagels – divide dough into 4 and roll each quarter into long “rope”; shape as bagel, brush with beaten egg, sprinkle with topping of your choice. To make cheese-filled rolls, divide dough into 4, flatten slightly, place piece of cheese in centre, shape into roll, covering cheese.
Don’t have Greek yogurt? Strain regular yogurt through cheese cloth or a coffee filter until remaining yogurt is thick and has consistency of soft cream cheese.
