1 cup flour
1/2 cup sugar
1 tsp. baking powder
1/4 cup butter or margarine
1/2 cup milk
1 fresh egg
1 tsp. vanilla
finely diced fresh or frozen plums
Topping
1 1/2 cups of flour
1/2 cup of butter (or margarine)
melted
1 1/2 cup of sugar
Preheat your oven to 350 degrees. Grease a 9X13 pan.
Place 1 cup flour, 1/2 cup sugar, baking powder and 1/4 cup butter in a food processor OR cut the butter into the above ingredients with a pastry blender. Combine until crumbly. Add in 1/2 cup milk
Spread into the prepared pan
Top with finely diced fresh or frozen plums (tart fruit like rhubarb or halved Italian Plums works well, but you can use other fruits).
To make toping: combine the flour, sugar and butter to make crumbs and sprinkle over the fruit.
Bake in the top 1/3 of your oven until golden brown . . about 30 minutes.
